Healthy Meal of the Week

Hi all!  Tonight is the first installment of “Healthy Meal of the Week”.  Sometimes I may have a link to the recipe and nutritional information; sometimes I may just put the entire thing right in the post.  This week I’m including the recipe as well as the nutritional value here.

Tonight’s meal was “Mediterranean Quesadillas with Pear and Red Onion Salad” from my Eat Well, Lose Weight magazine.  This magazine is a Better Homes and Gardens special issue that states it will be on newsstands until March 26 if anyone wants to pick it up.  This meal was very yummy and unlike many recipes it is a full course meal.  It includes the main dish, a salad and a side (beans with vinaigrette) and only takes 30 minutes to prepare from start to finish.  Check out the recipe, nutritional value and picture below!  If anyone has any questions or comments let me know.

Ingredients:

1 teaspoon olive oil
½ of a small red onion, thinly sliced
1 clove garlic, minced
8 cups baby spinach (about 9 ounces)
Nonstick cooking spray

½ cup snipped dried tomatoes (not oil packed)
4 8-inch whole wheat flour tortillas
1 cup shredded part-skim mozzarella cheese (4 ounces)

1 ½ cups canned Great Northern beans, rinsed, drained and warmed
4 tablespoons Essential Everyday Vinaigrette (recipe below) or desired bottled vinaigrette salad dressing

2 Bartlett pears, cored and sliced
4 cups torn mixed salad greens
¼ cup dried cranberries

1 cup reduced-sodium pasta sauce with basil and oregano, warmed

Directions:

1.  In a large skillet heat oil over medium heat.  Add onion and garlic; cook 3 to 4 minutes or until onion is tender.  Add spinach to skillet; cover.  Cook for 1 to 2 minutes or until spinach is wilted, stirring once; remove from skillet and set aside.  Wipe skillet with paper towels; coat with cooking spray and place over medium heat.

2.  For quesadillas, divide spinach mixture and snipped tomatoes among tortillas.  Sprinkle with mozzarella.  Fold tortillas in half.  Add tortillas, one or two at a time, to skillet; cook 2 to 4 minutes or until browned, turning once.  Remove from skillet; cut into wedges.

3.  For beans, in a small bowl toss beans with 2 tablespoons f the Essential Everyday Vinaigrette; set aside.

4.  For salad, in a bowl combine pears and the remaining 2 tablespoons Essential Everyday Vinaigrette.  Add greens and cranberries; toss.  Serve quesadillas with sauce, salad and beans.

Makes 4 servings (1 quesadilla, ¼ cup pasta sauce, 1 ½ cups salad, and 1/3 cup beans each).

Essential Everyday Vinaigrette: In a screw-top jar combine 6 tablespoons olive oil; ¼ cup red wine vinegar; 1 tablespoon Dijon-style mustard; 1 clove garlic, minced; 1 teaspoon honey; 1/8 teaspoon salt; and dash freshly ground black pepper.  Cover and shake.  Use immediately or store in refrigerator up to 5 days.  Let stand at room temperature 30 minutes before using.  Makes 2/3 cup.

Weekly Wrap-Up

It’s Oscar Sunday, who’s watching?  Anybody have any winner/loser predictions?  I’ll be honest I haven’t seen any of the nominated movies, even the ones Aaron has bought for me, lol.  Anyone have any best or worst dressed choices?  I missed most of the red carpet show so I don’t know what everyone is wearing.  I’ve seen a few of the stars and I’ve seen many pictures but I have to say my favorite of them all is Sandra Bullock, she always looks fabulous.  A few of my friends have said I resemble her, which is flattering, so I always like to see what she’s wearing to awards shows.  And she’s also a fantastic actress, I just love her!

Ok, enough of that, it’s time for the weekly wrap-up.  Just to warn you, it’s short this week.

Starting with weight loss, I gained this week.  Not a whole lot, just a pound so it’s not too bad.  And I’m not discouraged since I know if I just work a little harder this coming week I’ll be able to lose what I gained.   Also, since I’ve been trying to come up with some new topics for posts I’m going to work on cooking healthier foods.  Once a week I’ll post a “This Week’s Healthy Meal” topic with a link to the recipe of what I cook.  Hope everyone enjoys that.

Moving onto beauty/fashion purchases, there are none!  I know, I’m shocked too, lol.  The only shopping I did this weekend was groceries.  I doubt anyone is too interested in that.  I’ll have a few next week I’m sure.

I’m going to finish this up tonight with a new feature that will normally have its own separate post during the week, probably on Fridays I’m thinking, my “Outfit of the Week”.   I’ll include the brands and, if possible, where they were purchased.  Enjoy!

Grey and white striped shirt:  One Clothing (Burlington Coat Factory)
Jeans:  Seven7 (eBay)
Boots:  Soda (Shoe Carnival)
Signature Sophia handbag in grey with silver:  Coach
Black watch:  XOXO
Cuff bracelet in gunmetal:  don’t have the brand (Burlington Coat Factory)
Studded wrap bracelet in white:  Xhilaration (Target)

Well, that’s it for this week.  I hope everyone has a great week ahead!  Also, if there’s anything someone would like to see a post on, whether it’s a review, a tutorial or anything else, let me know and I’ll put one together!  Talk to everyone later! J

Weekly Wrap-Up

Another weekend almost over and a new week about to start.  Tonight’s post is up a little late.  I just got home from seeing Kathy Griffin do standup.  She was so hilarious and the show was awesome.  And I was with two awesome friends which makes it even better!  We had a great time.  Hope everyone is doing well and had a good week.  It’s time for the weekly wrap-up.

Starting with weight loss this week I’m very excited.  As of this past Monday’s weigh-in I’m down another 3.4 lbs. which brought me to my first goal weight!  Now I’m on to my second goal to lose just another 5 lbs.  After that all I have to do is maintain the loss.  I just want to thank all the girls and guys on my team who are so supportive in all this.  To everyone, not just to me.  You all rock!  And I’m so proud of all the hard work we’ve all put in on this J.

On to fashion and beauty purchases for this week.  There aren’t a whole lot once again.

For fashion I did get a new Coach handbag.  They’re my obsession as all my family and friends know.  I get invitations to the Coach Factory Outlet online sales so the prices are quite reasonable.  I got a large Sophia in grey with silver hardware and a beautiful amethyst lining.  I’m carrying her already and *love* her.

For beauty purchases I only picked up a few things.  I replaced my MAC Mineralized Skinfinish in Soft and Gentle and my MAC Mascara X in black since I was out of both.  I was also planning on getting a new MAC lipstick through their Back 2 MAC program, but I forgot how many empties it takes.  For those that don’t know, the Back 2 MAC is MAC’s recycling program.  They accept returns of their primary packaging (the boxes are labeled on the products that qualify).  If you return 6 empty packaging containers to a MAC counter or MAC Cosmetics  online you’ll receive a free MAC lipstick of your choice.  Even though I do have 6 empty containers, I left one at home because I thought it was 5.  So no knew lipstick for me this week, lol.

I also needed some new primer so I bought some Too Faced Primed and Poreless this time instead of the Smashbox PhotoFinish.  I like this one better for some reason, and it’s slightly cheaper which is nice.

And finally, I received my “The Club at Ulta” (their beauty club) certificate and I hit level 6 last quarter.  One of the options for level 6 is a free perfume up to a $40 value.  I picked out Jessica Simpson’s “I Fancy You” and got the 1.7 oz. that is $49 planning to pay the additional $9 but got the whole $49 off!  I was surprised.  I’m horrible at describing scents so I’m not even gonna try, lol.  I’ll just say I think it smells lovely J.

Finishing out this evening is my bi-weekly manicure.  This one is “Stranger Tides” by OPI from their Pirates of the Caribbean line.  It’s a very light sea green cream shade.  Now that spring is getting closer (it’s been in the 50’s here which is not normal for Kansas in February) I figured it’s time to mix in some lighter colors with the dark ones.  I think this one looks very pretty.

Well, that’s it for this week.  Hope you all have a great week ahead and I’ll talk to everyone later! J

For this day of hearts and cupid I have created a cute pink and purple look that’s great for daytime and should still look nice as evening comes along with dinners and movie dates.  It’s sweet, romantic and has some added sparkle.  Check it out, enjoy and I’ll talk to everyone later!  J

Weekly Wrap-Up

It’s Grammy’s Sunday, who’s watching?  It should be good with the tribute to Whitney Houston.  That was shocking news last night for sure.  My heart goes out to her family, friends and the fans she inspired with her beautiful voice and music.  She will be missed by many.

Starting the wrap-up this week as usual is the weight loss progress.  This week was a bit of a disappointment as I was up 1.6 pounds.  Apparently when I got off track a few weeks ago it finally caught up with me.  I have since been more disciplined with what I eat and I spent 30 minutes on my elliptical every night this past week.  I’m hoping I’m back down at weigh-in tomorrow morning.  I will say though that my clothes do fit better now so I know I really am losing a little at a time.  I have one pair of jeans that will definitely need to be taken in once I hit my goal weight.  I’m really excited about that!

As for beauty purchase this week, well there aren’t any, lol.  This is the first week in a long time where I haven’t bought some sort of makeup item.  It feels a bit strange.  I did have 3 fashion purchases though.  I stopped by Sears and got a pair of Kardashian Kollection jeans in “The Kourtney”, which are the slim fit skinny style,  since they were on sale.  I also got two Kardashian Kollection tops, one black and one grey, that were on clearance for $7.99 a piece and then an additional 30% off that price.  They came out to be $5.59 each.  So all in all I was able to get the jeans and two shirts for less than the full price of the jeans.  I love it when that happens!  I plan on getting another pair but I’m waiting on a bonus at work.  The pair I got this week is dark blue so when I go to get the second pair I think I’m gonna get a white pair in the same style.  I think they’ll look great with the black top.

Well, that’s it for this week.  Not a whole lot I know, but hopefully I’ll make up for that next week, lol.  I do plan to have a new tutorial up tomorrow evening.  Since Valentine’s Day is upon us I thought I should come up with a cute look for that so be sure to stop by and check that out!

I hope everyone has a great week ahead and I’ll talk to ya’ll later!  J

Weekly Wrap-Up

It’s Sunday and it’s the Superbowl, neither of which I’m all that excited about, so I’m spending this evening catching up on the shows I have on the DVR.  I’m quite a bit behind due to spending two evenings this past week filming tutorials for everyone J.   Sunday also means Weekly Wrap-Up time!

Starting with weight loss this week, I was very excited to have lost 3.6 pounds.  I really didn’t think that was going to happen, I’d gotten really off track the past few weeks and hadn’t been working out as much as I should have.  I also had not been eating well at all so I expected to at least maintain my weight if not gain a few pounds.

I’ve been back on track this week and have picked up quite a few healthier snacks.  They even taste good too.  My favorite right now is Nature Valley Granola Thins in peanut butter with a layer of dark chocolate on the bottom.  They are yummy and are only 80 calories per serving!

My one weakness, however, is Dr. Pepper.  This week I sucked it up and got some Dr. Pepper 10 (yes, I know it’s supposed to be “for men” but it tastes way better than Diet Dr. Pepper).  I generally don’t drink anything diet if it has aspartame in it as it is so unhealthy and causes all sorts of bad stuff, but I only bought it for those times when I’m really craving Dr. Pepper but don’t have the extra calories to spare.  Anyway, should be easier to stay on target now.

Moving on to beauty purchases, my NYX “Box of Smokey Look Collection” arrived this week.  I haven’t really played with it much because I’m still experimenting with my Crown Brush palette,  but there’s lots of potential I can see.  The one time I did use it this week it was for a very natural brown look, not the least bit smokey actually, lol.

This palette is divided into “Classic Smokey”, “Purple Smokey”, “Bronze Smokey” and “Natural Smokey”.  It also has 12 glitter shadows, 16 lip glosses, 4 concealers, 3 blushes and 3 other colors used for bronzer, highlighter and contour.  The colors are nice and pigmented and I hope to be able to create lots of different looks with it.  Check out the pictures of the palette below and it can be purchased here.

I also stopped by Ulta and was lucky enough to be able to grab the last “Love at First Blush” blush (obviously, lol) by Stila that they had left.  I haven’t had a chance to try it yet but the colors are nice.  I also got a similar Physician’s Formula blush called “Happy Booster” which claims to be mood boosting due to some plant extracts used in it.  I’m weary of this because it has a rosewater scent to it which is something that usually gives me a headache.  I haven’t actually tried it yet either though so I’m hoping once it’s applied the scent isn’t as strong.

I also picked up one of Maybelline’s Instant Age Rewind Eraser Dark Circles Treatment Concealer.  I’ve heard many good things about this so I decided it was time to try this out.  I had been using Garnier Nutritioniste’s Skin Renew Anti-Dark Circle Roller which works pretty good but I’ve heard the coverage of the Maybelline one is better.

I also got a new jar of Olay Age Defying Anti-Wrinkle night cream and two new EOS lip balms in sweet mint.  I just love both these products.  The Olay makes my skin nice and soft and the EOS does the same for my lips.

Finally, I picked up 3 new nail polishes.  Two were in the clearance bin which was nice.  They were part of OPI’s Pirates of the Caribbean line.  I got “Planks A Lot” which is a light purple and “Stranger Tides” which is a kind of a pale sea green color.

This week’s manicure is the other color I bought, “Kourt is Red-y for a Pedi” by Nicole by OPI’s Kardashian Kolor collection.  It’s a bright red cream shade, perfect for Valentine’s Day which is why I bought it, lol.

That’s it for this week, hope the upcoming week goes well for everybody!  Talk to you all later! J

Pretty in Pink

The past year or so I’ve been wearing mostly dark, smoky looks which have become rather boring and predictable, so when my new Crown Brush palette arrived last week I was very excited to try out some new looks.  The palette has some really pretty bright and pastel colors and so far I have come up with two new looks to share with everyone.

Tonight’s look I created using 5 of the pink shades in the palette.  It’s a mostly pastel look with a bright pop of pink in the corner.  It’s a very nice day look that can be turned into more of an evening look by just adding a bit of glitter.  Check out the video below to see how to achieve the look.  I’ll talk to everyone later!  J
